Bump Elasticsearch to the latest 8.15.1

  • The image calculates the java heap size from docker memory limits, so use that
  • elastic has their own registry
  • the docker image defaults to enabling security now, but we don't need it

Lightly tested by running a couple of save code nows in a fresh docker instance.
